Cabbage Wraps!

Cabbage is one of those vegetables that is often overlooked. But it can help create amazing dishes. Think about it, cabbage is in stir frys, stews, salad, coleslaw, etc. 
According to the USDA website, cabbage: 
     -Accounts for 45% of recommended amount of vitamin C
     -Has 20 calories for a (1/2 c serving) 
     -No cholesterol 
     -Has about 2g of fiber 
     -Also, it stores for a relatively long time. Longest shelf life of a vegetable I have seen. 
Ingredients: mushrooms, squash, onion, cabbage, and Mrs. Dash.

First, steam some leaves (whole) of cauliflower for about 5 min.
Steam all the other veggies
Then place the veggies in the cauliflower leaf.
You can either eat as is, or bake them in the oven for about 10 min with some seasoning.


I think I might try this again with some beans or quinoa.

Taco time! Raw taco with the papaya salad and topped with fresh guacamole.

It was the cauliflower wrap, a raw taco, and the papaya-corn salad (taco fillings).


Papaya-Corn Salad:

This included: tomatoes, mango, papaya, corn, celery, cilantro and lime
